Weekend Brunch Just Got Better with Cap’n Crunch French Toast
Weekend brunch at our house is kind of a big deal. It’s one of the few times during the week where we’re not rushing around with schedules and to-do lists. I love making something a little special – something fun that puts a smile on everyone’s face. This Cap’n Crunch French Toast totally did that. It’s sweet, a little nostalgic, and just crunchy enough to make you go whoa, this is different.
I’ll be honest, when I first heard about using cereal as a crust for French toast, I thought, that’s gonna be way too sweet. But it turns out it hits just the right balance, especially with the creamy egg mixture and warm cinnamon. Plus, the kids were obsessed. I mean, anything that involves Cap’n Crunch gets instant approval around here. We topped ours with syrup and berries, but I think next time I’ll try it with a scoop of vanilla ice cream just for fun.
If you’ve got a box of Cap’n Crunch hanging out in the pantry and some thick bread on hand, you’ve pretty much got everything you need. It’s super easy to throw together and cooks up quick too. So if you’re looking for a new twist on French toast for your next weekend brunch, this recipe is def worth a try. Trust me – brunch just got a lot more exciting.

Ingredients
-
6 slices of Texas Toast Bread – Thick, fluffy slices like Texas Toast work best here – they hold up to the egg soak and give you that perfect, custardy center.
-
3 eggs – Just three eggs whisked up is all you need to create that rich, golden coating.
-
2 cups of Cap’n Crunch Cereal – This is the fun part! Crush up the cereal for a crispy, sweet outer layer that makes the French toast extra special.
-
1 cup heavy cream – Heavy cream makes the egg mixture extra indulgent and adds a little richness to every bite.
-
4 tbsp butter – A bit of butter in the pan helps the toast crisp up beautifully and adds a touch of buttery flavor.
-
2 tbsp granulated sugar – Just a little sugar sweetens the batter without going overboard.
-
1 tsp vanilla extract – Vanilla adds that cozy, classic French toast flavor we all love.
-
1 tsp cinnamon – Cinnamon brings a warm spice that pairs perfectly with the sweetness of the cereal.

Step-by-Step Instructions
You can find a printable recipe card at the bottom of this post.
1. Place the Cap’n Crunch cereal in a Ziploc bag and crush it with a rolling pin until it’s broken down into small pieces.

2. In a medium bowl, whisk together the eggs, heavy cream, vanilla extract, granulated sugar, and cinnamon until smooth and well combined.

3. Set out two shallow bowls – one with the egg mixture and one with the crushed cereal.
4. Dip each slice of Texas Toast into the egg mixture, making sure it’s fully coated. Then press both sides into the crushed cereal to coat. Repeat with all slices.

5. Heat 2 tablespoons of butter in a large skillet over medium heat. Add the coated bread slices and cook for 6–8 minutes, flipping halfway through, until golden brown and crispy on the outside.
6. Serve warm with your favorite toppings – syrup, berries, or even a scoop of ice cream if you’re feeling extra fun!

Tips for Perfect Cap’n Crunch French Toast
-
Use Thick Bread
Texas Toast is ideal because it’s thick enough to soak up the egg mixture without falling apart. Day-old bread works even better – it holds its shape and absorbs more flavor. -
Crush, Don’t Pulverize the Cereal
You want small pieces of Cap’n Crunch, not powder. Crushing the cereal in a Ziploc bag with a rolling pin gives you a nice mix of textures for that crispy crust. -
Whisk the Egg Mixture Well
Make sure your eggs, cream, sugar, vanilla, and cinnamon are fully combined. A smooth custard base ensures even soaking and better flavor throughout. -
Don’t Oversoak the Bread
Let the bread soak just long enough to absorb the egg mixture, but not so long that it gets soggy and falls apart. A quick dip on each side is usually enough. -
Use a Nonstick or Well-Butter Pan
The cereal coating can burn or stick easily, so cook on medium heat with a nonstick skillet or a generous pat of butter to keep things golden and crisp. -
Cook Low and Slow
Avoid high heat – it can burn the cereal before the inside of the toast is cooked. Medium or medium-low heat works best for a crisp outside and soft center. -
Serve Right Away
For the crunchiest texture, serve the French toast as soon as it’s off the skillet. It’s still tasty later, but the cereal softens a bit as it sits. -
Get Creative with Toppings
Syrup is a classic, but this French toast is also amazing with fresh berries, whipped cream, powdered sugar, or even a scoop of vanilla ice cream for a fun twist.

Get Creative!
-
Fruit Explosion – Top with sliced bananas, strawberries, blueberries, or a mix of all three. A drizzle of honey or fruit syrup takes it over the top.
-
Ice Cream Dream – Turn breakfast into dessert by adding a scoop of vanilla or caramel ice cream and a sprinkle of crushed cereal on top.
-
Whipped Cream & Sprinkles – A dollop of whipped cream and a handful of colorful sprinkles make it extra fun for kids (or just the kid in you).
-
Peanut Butter Drizzle – Warm a spoonful of peanut butter in the microwave and drizzle it over your toast for a salty-sweet combo that’s hard to beat.
-
Caramelized Bananas – Sauté banana slices in butter and brown sugar for a warm, gooey topping that pairs perfectly with the crunchy coating.
-
Chocolate Lovers’ Twist – Add mini chocolate chips or a drizzle of chocolate syrup for a decadent treat.
-
Stuff It! – Make a sandwich out of two slices with a layer of cream cheese, Nutella, or jam in the middle before dipping and frying.

Serving & Storing
-
Serve Warm – Cap’n Crunch French Toast is best enjoyed fresh off the skillet while it’s still warm and crispy. If you’re feeding a crowd, keep cooked slices warm in a 200°F oven until you’re ready to serve.
-
Perfect for Brunch Boards – Slice into halves or quarters and serve on a brunch board with fresh fruit, mini syrups, and whipped cream for a fun and interactive spread.
-
Make-Ahead Friendly – You can prep the egg mixture and crush the cereal the night before. Just store both in airtight containers in the fridge so you’re ready to dip and cook in the morning.
-
Storing Leftovers – Let leftovers cool completely, then store in an airtight container in the fridge for up to 2 days. The cereal coating will soften a bit, but it’ll still be tasty.
-
Reheating Tips – Reheat in a toaster oven or air fryer for a few minutes to bring back that crispy texture. Avoid the microwave unless you’re in a hurry – it’ll make the toast soft.
-
Freezer Friendly – Want to save some for later? Lay cooked slices in a single layer on a baking sheet to freeze. Once frozen, transfer to a freezer bag. Reheat straight from frozen in the toaster oven or oven.
