For the Muffins:
1. Preheat your oven to 180°C (350°F) and line a 12-cup muffin tin with paper liners.
2. In a large bowl, beat the softened butter, sugar, vanilla, eggs, and sour cream until the mixture is light and fluffy.


3. In a separate bowl, whisk together the flour and baking powder.
4. Add the dry ingredients to the wet ingredients and mix until just combined.

5. Fold in the chocolate chips and crushed Oreos.


6. Spoon the batter into the muffin liners, filling each one about three-quarters full, and press a mini Oreo piece into the center of each muffin.

7. Bake for 20–25 minutes or until a toothpick inserted into the center comes out clean, then cool completely on a wire rack.

8. Once cooled, use a small knife or cupcake corer to remove a small piece from the center of each muffin.
9. Fill the opening with finely crushed Oreos and place the trimmed “lid” back on top so it sits flat.


For the Frosting:
1. In a bowl, beat the softened butter and sifted powdered sugar together until creamy.
2. Add the vanilla and a few drops of blue food coloring, then beat until the frosting is smooth and fluffy.



3. Transfer the frosting to a piping bag fitted with a grass or star piping tip.
For the Decoration:
1. Pipe the blue frosting over the top of each cooled muffin to create the “fur.”



2. Press two edible eyeballs into the frosting.
3. Insert half of a chocolate chip cookie into the frosting so it looks like Cookie Monster is taking a bite.
