Ingredients

Step-by-Step Instructions

1. Start by preheating the oven on 350 degrees.
2. The diced pineapples will be a very wet so pat them with a paper towel to get rid of the excess liquid.

3. In a mixing bowl, add the carrot cake mix, softened butter, Cinnamon, all purpose flour, pineapples, and eggs. Mix all the ingredients together until combined and have formed a soft dough. About 3 minutes

4. Add most of the toasted pecans to the mixing bowl and fold them into the cookie dough. Save a few pieces to use as decor later.

5. Use a spoon or ice cream scooper to scoop the dough into 2 – 2 1/2 tablespoon balls and place them onto the cookie sheet lined with parchment paper. Be sure to space the balls out so they have enough room to spread while baking.

6. Bake the cookies for 10-12 minutes.

7. Sit them aside to cool.
8. Once cooled, put the buttercream in a piping bag and cut a medium size hole on the tip of the bag.

9. Pipe a the buttercream in a circle around the cookie, until the top is completely covered.

10. Next add the sprinkles and the rest of the toasted pecans randomly on top of the buttercream.
