Easy German Chocolate Cupcakes with a Gooey Coconut Pecan Surprise

I’ve got to admit, German chocolate cake has always been one of my all-time favorite desserts. That rich chocolate paired with gooey coconut and crunchy pecans just hits all the right spots. But let’s be real, sometimes the idea of baking a whole cake feels like a big project. That’s why I decided to turn this classic into something a little easier and way more fun: German chocolate cupcakes with a gooey coconut pecan surprise right in the middle. Trust me, they’re every bit as delicious but way more manageable!

What I love most about this recipe is how the cupcakes are soft and chocolatey, but then you get that unexpected burst of sweet coconut and pecans in the center. It’s like a little treasure hiding inside each one! Plus, the chocolate cream cheese frosting on top adds that perfect creamy finish. Making these cupcakes feels like a little celebration every time, whether it’s for a casual weekend treat or a special get-together.

If you’re looking for a dessert that’s impressive but doesn’t require a ton of effort or fancy equipment, these German chocolate cupcakes are exactly what you need. They’re simple to whip up, taste amazing, and always get compliments. I can’t wait for you to try them and see how quickly they disappear once you bring them out!

Ingredients

For the cupcakes:
1 cup flour: The base that gives these cupcakes their soft, tender crumb.
½ cup brown sugar: Adds a touch of rich, caramel-like sweetness.
½ cup sugar: Balances the flavors with just the right amount of sweetness.
¼ cup cocoa powder: Brings that deep, chocolaty flavor we all love.
1 tsp baking powder: Helps the cupcakes rise nice and fluffy.
½ tsp baking soda: Works with the other leavening to give a perfect texture.
½ tsp salt: Enhances all the flavors and keeps things balanced.
⅓ cup oil: Keeps the cupcakes moist and tender.
⅓ cup milk: Adds a little creaminess to the batter.
1 egg: Binds everything together and gives structure.
1 tsp vanilla: Adds warmth and a lovely sweet aroma.
⅓ cup water: Lightens the batter for a soft, delicate cupcake.
⅓ cup sour cream: Brings a subtle tang and extra moisture to keep them tender.

For the coconut pecan filling:
½ cup evaporated milk: Creates that smooth, creamy base for the filling.
2 egg yolks: Thicken the filling while adding richness.
½ cup brown sugar: Sweetens the filling with a deep, molasses flavor.
¼ cup unsalted butter: Adds buttery richness and helps it thicken perfectly.
1 tsp vanilla: Lifts the flavor with a warm, sweet note.
1 cup sweetened shredded coconut: Gives the filling that classic chewy coconut texture.
¾ cup pecans: Adds a satisfying crunch and nutty flavor.

For the chocolate frosting:
½ cup chocolate chips, melted: Brings a rich, intense chocolate kick.
6 tbsp unsalted butter, softened: Creates a creamy, smooth frosting base.
3 oz cream cheese, softened: Adds a tangy creaminess that balances the sweetness.
1 ½ cup powdered sugar: Sweetens the frosting while keeping it light and fluffy.
¼ cup cocoa powder: Deepens the chocolate flavor without extra sweetness.
1 tbsp milk, if needed: Helps get the frosting to just the right spreadable consistency.

Step-by-Step Instructions

You can find a printable recipe card at the bottom of this post.

1. Preheat the oven to 350 degrees.  Line a couple standard muffin tins with cupcake liners and set aside.

2. In the bowl of a stand mixer, combine the flour, sugar, brown sugar, baking soda, baking powder, salt and cocoa powder.  Whisk to combine.

3. Add in the egg, oil, milk, vanilla, water and sour cream.  Mix on low until combined.  Scrape the sides often and then bump up the speed to medium for about 30 seconds to ensure it’s mixed well.

4. Divide the batter between each of the cupcake liners, filling them about ½ full.

5. Bake in the preheated oven for 14-16 minutes or until the centers are set.  Allow to cool completely before decorating.

6. For the coconut pecan filling – in a large saucepan, combine the evaporated milk, egg yolks, brown sugar and butter.

7. Heat over low until simmering – stirring frequently.  Allow to simmer for about 2-3 minutes or until thickened.

8. Remove from the heat and add in the vanilla, coconut and pecans.  Stir to combine.

9. Allow to cool completely before decorating.

10. For the frosting – In the bowl of a stand mixer, combine the softened butter and cream cheese until smooth.

11. Add in the powdered sugar and cocoa.  Mix on low until combined.  Bump up the speed to medium and whip for another minute.

12. Add in the melted chocolate, cooled to room temperature, and mix to combine.  Only if the frosting looks dry and crumbly can you add the tablespoon of milk, otherwise do not add any.  You want the frosting thick, but not crumbly.

13. Whip the frosting for a minute on medium, scraping the side often, until the frosting is smooth and fluffy.

14. Transfer the frosting to a piping bag fitted with a large star tip.

15. Once the cupcakes are cool, pipe a spiral of frosting around the outside edge of each of the cupcakes, leaving the center empty.

16. Spoon a dollop of the coconut pecan filling into the center of each of the frosting rings on each cupcake, gently pressing to fill in the hole.

Tips for the Perfect German Chocolate Cupcakes

  • Don’t rush the mixing, take a moment to scrape down the sides of your bowl so everything blends together evenly. It makes a huge difference!

  • Use room temperature ingredients whenever you can. It helps the batter come together smoothly and keeps the cupcakes super tender.

  • Be careful not to overbake! Check your cupcakes a minute or two before the timer goes off, you want them moist and springy, not dry.

  • Let those cupcakes cool completely before frosting. Trust me, no one wants frosting sliding off warm cupcakes!

  • For the coconut pecan filling, keep stirring while it simmers so it thickens evenly without sticking or burning. Patience pays off here.

  • If your frosting looks too thick, add milk just a little at a time, but don’t go overboard, or it’ll get runny. You want that fluffy, pipe-able texture!

  • Don’t skip the coconut pecan filling in the center, it’s the best surprise inside that takes these cupcakes from good to unforgettable.

  • Feel free to toast your pecans lightly for an extra toasty, nutty flavor that’ll have everyone asking for seconds.

Get Creative!

  • Swap out the pecans for walnuts or almonds if that’s what you have on hand, still delicious and adds a new twist!

  • Add a little espresso powder to the cupcake batter for a subtle mocha kick that pairs perfectly with the chocolate and coconut.

  • Try topping your cupcakes with toasted coconut flakes or extra chopped nuts for some added crunch and flair.

  • Mix in a handful of mini chocolate chips into the batter for surprise bursts of melty chocolate in every bite.

  • Turn these cupcakes into a mini dessert party by serving them alongside a scoop of vanilla ice cream or a drizzle of caramel sauce.

  • Use different piping tips to create fun frosting designs, stars, rosettes, or even little swirls that look fancy but are super easy!

  • For a festive touch, sprinkle a bit of edible gold dust or colored sugar on top before serving. Instant wow factor!

  • Feeling adventurous? Add a splash of coconut rum to the filling for a grown-up twist that’s sure to impress.

Serving & Storing

  • These cupcakes are best served at room temperature so the frosting stays nice and creamy without being too firm or melting away.

  • If you’re not eating them right away, store the cupcakes in an airtight container in the fridge, they’ll keep fresh for about 3-4 days.

  • Before serving chilled cupcakes, let them sit out for 20-30 minutes to soften up and bring back that perfect texture.

  • You can freeze these cupcakes (without frosting) for up to 2 months, just wrap them well and thaw in the fridge overnight when you’re ready to enjoy.

  • If you want to freeze with frosting, freeze them first unfrosted, then add the frosting fresh after thawing for the best taste and texture.

  • These cupcakes make an awesome make-ahead dessert for parties or special occasions, just plan ahead and keep them chilled until showtime!

  • When serving, a simple dusting of powdered sugar or a few toasted pecans on top adds a nice finishing touch.
