Ingredients

For the cookie base:

  • ½ cup unsalted butter – Softened to make the perfect cookie dough base.

  • ½ cup sugar – Adds just the right amount of sweetness to balance the tangy filling.

  • ¼ cup brown sugar – Gives the cookies a rich, caramel-like flavor.

  • 1 egg – Helps bind everything together for that perfect chewy texture.

  • 1 teaspoon vanilla – A splash of vanilla enhances the overall flavor profile.

  • 1 ½ cups flour – The foundation for creating the soft, delicious cookie dough.

  • 1 ½ cups graham crackers, crushed and divided – Adds a crumbly, buttery texture and authentic graham cracker flavor.

  • ½ teaspoon salt – A pinch of salt brings out all the flavors and balances the sweetness.

  • ½ teaspoon baking soda – Helps the cookies spread just right during baking.

  • ½ teaspoon baking powder – Ensures a soft and fluffy texture in each bite.

For the filling:

  • 5 oz cream cheese, softened – Gives the filling a creamy, smooth texture that pairs perfectly with the key lime.

  • ⅓ cup sweetened condensed milk – Adds sweetness and richness to the filling.

  • ¼ cup key lime juice – The key ingredient for that refreshing, zesty flavor.

  • 1 tablespoon key lime zest – Packs in more key lime flavor and adds a little extra punch.

Optional:

  • Whipped topping – For a creamy, light finish on top of each cookie.

  • Key lime slices – A cute and tangy garnish that makes these cookies even more irresistible.

Tips for the Perfect Crumbl Copycat Key Lime Cookies

  • Chill the dough – Don’t skip the chilling step! Letting the dough rest in the fridge for at least 2 hours helps the cookies hold their shape while baking and gives them that perfect chewy texture.

  • Use room temperature butter – Softened butter creams better with the sugars, giving the cookies a lighter texture. It helps avoid that greasy, dense result.

  • Press the cookies down gently – When you’re making the indent for the filling, press just enough so that it holds, but don’t go too deep! You want a nice little bowl for the filling, not a hole.

  • Be generous with the graham crackers – Roll the dough balls in the graham crackers generously. The extra crunch adds to that authentic key lime pie flavor!

  • Don’t over-bake – These cookies are best when they’re slightly underdone, so keep an eye on them toward the end of baking. A little soft in the middle is perfect!

  • Fresh key lime juice is key – If you can get fresh key limes, use them! The fresh juice adds a tangy kick that the bottled stuff just can’t match.

  • Let them cool completely before filling – The filling is delicate, so make sure the cookies are fully cooled before piping it in. Otherwise, it could get a little runny!

Get Creative!

  • Swap the filling flavor – Love lemon? Try a lemon curd filling instead of the key lime for a twist on the classic. Or, go for a raspberry filling for a fruity, tangy kick!

  • Make mini versions – Want bite-sized treats? Shape your dough into smaller balls and bake for mini cookies that are just as cute and delicious.

  • Add some texture – Mix in a handful of shredded coconut to the cookie dough for extra crunch and flavor. It’ll bring a tropical vibe to your cookies!

  • Experiment with toppings – Instead of whipped cream, try a scoop of vanilla ice cream or a drizzle of white chocolate on top for a different texture and flavor contrast.

  • Try a different crust – Swap out the graham crackers for crushed digestive biscuits or even a cinnamon graham cracker crust for a fun spin.

  • Get extra with the garnish – Add a sprinkle of toasted coconut or a few crushed-up macadamia nuts on top for an extra layer of flavor and crunch.

Serving & Storing

  • Serving tip – These cookies are perfect for serving at parties, BBQs, or any summer gathering. They look adorable on a platter and are super refreshing with that tangy key lime filling. For an extra touch, garnish them with a sprig of mint or an extra slice of key lime.

  • Pairing suggestion – Enjoy these cookies with a nice cold glass of iced tea or a fruity mocktail. The zesty key lime flavor pairs perfectly with something citrusy or sweet!

  • Storing tip – To keep your cookies fresh, store them in an airtight container in the fridge. The filling will stay nice and creamy, and the cookies will hold their shape. They’ll last up to 3-4 days, but I bet they won’t last that long!

  • Freezing tip – Want to keep a batch on hand for later? You can freeze the baked cookies without the filling for up to 3 months. When you’re ready, just thaw them out and pipe in the filling. It’s a great way to prep ahead!
