Ingredients

  • 9 cups Chex cereal, divided in half: I usually go with Corn Chex for that perfect crunchy bite, but feel free to use your family’s favorite!

  • 2 cups white melting wafers: White chocolate melting wafers give these muddy buddies their sweet, creamy coating – it’s impossible to resist!

  • ⅓ cup + ¾ cup powdered sugar: Powdered sugar adds that delightful sweetness and signature muddy buddy finish.

  • 1-¼ cup freeze-dried strawberries (0.8oz or 23g): Freeze-dried strawberries bring a vibrant, fruity punch without any moisture, keeping things crisp and crunchy.

  • 2 packets True Lemon powder: True Lemon powder intensifies the lemony zing without making the chocolate seize up – it’s my secret weapon here!

  • Zest from 1 lemon: Fresh lemon zest adds brightness and makes these muddy buddies taste irresistibly fresh.

Step-by-Step Instructions

1. Line two baking sheets with parchment or wax paper, and set aside.

2. To first make the “strawberry half” of the muddy buddies, place 4.5 cups of the chex cereal into a large bowl and set aside.

3. Pour ⅓ cup powdered sugar into a large gallon-size ziplock bag and set aside.

4. Using a food processor or spice grinder, grind the freeze-dried strawberries into a fine powder.

5. Pour the strawberry powder into the bag with the powdered sugar and mix it together until it is combined.

6. Place 1 cup of the white melting wafers into a glass or microwave-safe dish, and microwave for 30 seconds at 50% power. Remove from microwave and stir. Continue to microwave in 15-second intervals (at 50% power), stirring between each interval, until completely melted and smooth.

7. Pour the melted white chocolate over the chex cereal and gently mix together until the cereal is fully coated.

8. Pour the coated cereal into the ziplock bag with the powdered sugar & strawberry powder mixture, seal the bag, and shake until the cereal is well-coated with the powdered sugar mixture.

9. Dump the cereal onto one of the lined baking sheets and spread it out evenly into a single layer over the sheet.

10. Allow to cool for 30 minutes.

11. Meanwhile, to make the “lemon half” of the muddy buddies, place the remaining 4.5 cups of Chex cereal into a large bowl. (It can be the same one you used before; it’s okay if there is dried melted chocolate around the bowl from mixing the first half earlier).

12. Place the remaining ¾ cup powdered sugar, two packets of True Lemon powder, and half of the lemon zest into a large gallon-size ziplock bag. Mix together until evenly combined, and set aside.

13. Place the remaining 1 cup of the white melting wafers into a glass or microwave-safe dish (can be the same one you used before to melt the first half of wafers), and microwave for 30 seconds at 50% power. Remove from microwave and stir. Continue to microwave in 15-second intervals (at 50% power), stirring between each interval, until completely melted and smooth.

14. Stir the remaining half of lemon zest into the melted white chocolate.

15. Pour the melted white chocolate mixture over the chex cereal and gently mix together until the cereal is fully coated.

16. Pour the coated cereal into the ziplock bag with the powdered sugar/True Lemon/zest mixture, and seal the bag. Shake until the cereal is well-coated with the powdered sugar mixture.

17. Dump the cereal onto the other lined baking sheet and spread it out evenly into a single layer over the sheet.

18. Allow to cool for 30 minutes.

19. Once cooled, place both of the flavored muddy buddies into one large bowl and mix them together.
