This chicken pie recipe is simple yet delicious, and it's a huge hit whenever I make it in our house.

Ingredients

  • 750g chicken breast
  • 1 tbsp oil
  • 200g bacon lardons
  • 1 large onion, diced
  • 3 carrots, diced
  • 3 sticks celery, diced
  • 2 tsp mixed herbs
  • 300ml chicken stock
  • 300ml semi-skimmed milk
  • Salt
  • Black pepper
  • Ready-made pastry sheet
  • 1 beaten egg

Instructions

  1. Heat the oil in a large frying pan and add the chicken and bacon. Cook for around 10 minutes until starting to turn golden.
  2. Add in the diced vegetables. I use a vegetable chopper to make sure all of the vegetable pieces are an equal size. Cook for 5 minutes.
  3. Add the flour and mixed herbs. Cook for a further five minutes.
  4. Slowly add in the chicken stock and flour, mixing as you add it. Cook for a further five minutes. Simmer for 10 minutes and allow to thicken.
  5. Spoon your pie mixture into a pie dish and allow to cool for around half an hour.
  6. Preheat your oven to 220°C (Gas Mark 7)
  7. Place your pastry over the top of your pie filling, decorate with pastry shapes and brush with the beaten egg.
  8. Cook for 30 minutes and serve immediately.
