Slow Cooker Chicken Marsala: A Cozy, No-Fuss Dinner with Big Flavor

Chicken Marsala has always felt like one of those “restaurant-only” meals to me. You know the kind. Rich sauce, tender chicken, and mushrooms that soak up all that savory flavor. I used to think it was too fancy or complicated to make at home, until I started playing around with a slow cooker version. And let me tell you, this Crockpot Chicken Marsala is everything I love about the classic dish, just way easier.

I threw this together on a busy weekday and was honestly shocked at how simple it was. It only took about 10 minutes to prep everything, then I let the slow cooker do it’s thing while I tackled the never-ending to-do list. The chicken comes out so tender, and the marsala sauce is creamy, cozy, and full of flavor without feeling heavy. Even my kids, who normally side-eye mushrooms, asked for seconds.

This is one of those meals that makes you feel like you did something a little special, even when you didn’t have a ton of time. I like to serve it with mashed potatoes or even over egg noodles if we’re switching things up. It’s been a hit every single time I’ve made it, and honestly, I think it’s gonna be in our dinner rotation for a while.

Ingredients

  • 1 ½ pounds chicken breasts, cut lengthwise to make cutlets: Cutting the chicken into thinner cutlets helps it cook evenly and soak up all that delicious flavor.
  • 1 cup marsala cooking wine: This sweet, rich wine gives the sauce its signature depth and cozy warmth.
  • ½ cup chicken broth: A little broth stretches the sauce and adds a savory base without overpowering the Marsala.
  • 2 cloves of garlic, minced: Fresh garlic brings a pop of bold, aromatic flavor that ties everything together.
  • 8 oz sliced bella mushrooms: These mushrooms get so tender and flavorful after simmering in the sauce; they’re one of my favorite parts.
  • 2 tbsp cornstarch: A quick cornstarch slurry thickens the sauce perfectly without making it too heavy.
  • Fresh parsley, to garnish: A sprinkle of parsley at the end adds a fresh touch and makes the dish feel a little extra special.

Tips for the Perfect Slow Cooker Chicken Marsala

  • Slice the chicken evenly: Cutting the chicken breasts into uniform cutlets helps them cook evenly and stay tender in the slow cooker.

  • Don’t skip seasoning: Season the chicken well with salt, pepper, and garlic before adding it to the crockpot for the best flavor.

  • Use real Marsala wine if you can: If it’s available, opt for real Marsala wine instead of the cooking wine from the grocery store. It adds a richer, more authentic flavor.

  • Add mushrooms on top: Placing the mushrooms on top of the chicken helps them cook down slowly and soak up the flavors without getting soggy.

  • Thicken the sauce at the end: Wait until the end to stir in the cornstarch slurry. This gives you a silky, thickened sauce without overcooking it.

  • Garnish just before serving: Add fresh parsley right before serving for a pop of color and freshness.

  • Make it a meal: Serve this over mashed potatoes, egg noodles, or even creamy polenta for a complete comfort food dinner.

Get Creative!

  • Try different mushrooms: Swap out the bella mushrooms for cremini, shiitake, or a wild mushroom mix for a deeper, earthier flavor.

  • Add a splash of cream: For an extra luxurious sauce, stir in a splash of heavy cream at the end.

  • Make it keto-friendly: Serve over cauliflower mash or sautéed spinach instead of potatoes or noodles.

  • Toss in extra veggies: Add sliced onions or baby spinach during the last 30 minutes of cooking for an extra veggie boost.

  • Use chicken thighs: Prefer dark meat? Boneless, skinless chicken thighs work great and stay super juicy in the slow cooker.

  • Amp up the garlic: If you’re a garlic lover, go ahead and toss in an extra clove or two for a bolder kick.

  • Top with cheese: Sprinkle with freshly grated Parmesan or even a little mozzarella before serving for a cozy, cheesy finish.

Serving & Storing

  • Best served warm: This dish is at its best when served warm over mashed potatoes, egg noodles, rice, or even crusty bread to soak up all that sauce.

  • Make it a full meal: Pair it with a simple side salad or steamed green beans for a well-rounded dinner.

  • Great for meal prep: The flavors deepen even more after a day in the fridge, making it a great make-ahead option for busy weeks.

  • How to store: Store leftovers in an airtight container in the fridge for up to 3–4 days.

  • Reheating tips: Reheat gently on the stovetop or in the microwave, adding a splash of broth or cream to loosen the sauce if needed.

  • Can you freeze it?: Yes! Freeze in a freezer-safe container for up to 2 months. Just thaw overnight in the fridge and reheat when ready to serve.
