Bright & Buttery Lemon Poppy Seed Cupcakes with Fluffy Lemon Frosting

I’ve always had a soft spot for lemon desserts. There’s just something about that bright, zesty flavor that makes me feel like it’s already spring, even if it’s still chilly outside. These Lemon Poppy Seed Cupcakes totally hit the spot when I’m craving something sweet and citrusy. They’re soft, buttery, and just the right amount of tangy, especially with that fluffy lemon frosting piled on top. I honestly could eat the frosting by the spoonful… not saying I have, but I definitely have.

This recipe comes together super quick, which is a lifesaver on busy days. The cupcake batter is really simple with just a handful of pantry staples and some fresh lemon zest and juice to brighten everything up. And the poppy seeds give it that bakery-style vibe, which makes them feel a little more special. I usually bake these when we’ve got friends coming over or if the kids are asking for “something lemony.” They never last long on the counter.

You can totally decorate these however you like, but I love adding a little sprinkle of poppy seeds and a lemon wedge on top. Makes them look fancy without any extra effort. I’ve made them for brunches, school events, even just for a mid-week treat. They’re the kind of cupcake that makes people pause after the first bite and go, “wait, did you make these?” Yep. And now you can too.

Ingredients

For the cupcakes:

  • 1 cup sugar – I start by sweetening the batter with a classic cup of sugar; it balances out all that tart lemon.

  • 1 tbsp lemon zest – Fresh lemon zest adds such a punchy, bright flavor. I always zest the lemon right over the bowl so none of those oils go to waste.

  • 1 ¾ cup flour – I use all-purpose flour here for a nice soft crumb that still holds up well.

  • 1 tbsp cornstarch – A spoonful of cornstarch makes these cupcakes extra tender and fluffy.

  • 1 ½ tsp baking powder – Just the right amount to give the cupcakes that perfect little lift.

  • ½ tsp baking soda – A bit of baking soda helps the batter rise and adds a touch of golden color.

  • ½ tsp salt – A pinch of salt sharpens all the flavors and keeps things from being too sweet.

  • 12 tbsp unsalted butter, melted – I melt the butter so it blends easily into the batter and adds rich, buttery flavor.

  • ½ cup sour cream – Sour cream makes these cupcakes so moist and adds a slight tang that works great with lemon.

  • 1 tsp lemon extract – A splash of lemon extract really boosts the citrus flavor, especially if your lemons are on the mild side.

  • ¼ cup milk – Just enough milk to keep the batter smooth and scoopable.

  • 2 tsp poppy seeds – I love the little crunch and classic look that poppy seeds give – can’t have lemon poppy seed without them!

  • ¼ cup lemon juice – Fresh lemon juice brightens the whole batch and makes each bite taste like sunshine.

For the frosting:

  • 12 tbsp unsalted butter, softened – Room-temp butter is key for a creamy, fluffy frosting – don’t skip this step.

  • 4 cups powdered sugar – This gives the frosting its structure and sweetness; I usually sift it to avoid any lumps.

  • 1 tbsp lemon zest – A little extra zest in the frosting makes it smell amazing and ties in with the cupcake flavor.

  • ¼ cup lemon juice – Lemon juice adds that zingy flavor and helps thin out the frosting just right.

  • 2 tbsp milk – A splash of milk helps get the texture perfectly light and spreadable.

To decorate:

  • Lemon wedges – These are optional, but I think they make each cupcake look so fresh and pretty.

  • Additional poppy seeds – A sprinkle on top ties the whole look together and adds a little extra crunch.

Step-by-Step Instructions

You can find a printable recipe card at the bottom of this post.

1. Preheat the oven to 350 degrees.  Line two standard muffin tins with cupcake liners, set aside.

2. In a food processor, combine the sugar and lemon zest.  Pulse for about a minute or until the sugar is a pale yellow color.

3. In a medium bowl, combine the sugar, melted butter, eggs, sour cream, lemon extract and milk.  Whisk to combine.

4. In another medium bowl, combine the flour, corn starch, baking powder, baking soda and salt.  Whisk to combine.

5. Combine the wet ingredients with the dry.  Mix well.

6. Add in the poppyseeds and lemon juice.  Mix just until combined.

7. Use an ice cream scoop or similar to divide the batter between the cupcake liners until about half full.

8. Bake in the preheated oven for 15-18 minutes or until the center is set and spongy to the touch.  Allow to cool completely before decorating.

9. For the frosting – in the bowl of a stand mixer, combine the softened butter, about half of the powdered sugar, lemon juice and the vanilla.  Mix on low just until combined.

10. Add the remaining powdered sugar and the milk.  Mix on low until combined and then bump up the speed to medium and whip for an additional minute or two, until the frosting is smooth and fluffy.  Scrape the sides as needed.

11. Transfer the frosting to a piping bag fitted with a large star tip.

12. Once the cupcakes are cool, pipe a large mound on top of each cupcake.  Sprinkle with additional poppy seeds and a lemon wedge, if desired.

Tips for the Perfect Lemon Poppy Seed Cupcakes

  • Use fresh lemon zest and juice. I know it’s tempting to reach for bottled lemon juice, but fresh really makes a big difference here. Zest your lemons before juicing them to make it easier!

  • Don’t skip the cornstarch. It might seem like a small thing, but cornstarch helps soften the texture of the cupcakes and makes them feel more like bakery-style.

  • Don’t overmix the batter. Once you add the flour, mix just until everything’s combined. Overmixing can lead to dense cupcakes, and we want these to be light and tender.

  • Use room temperature ingredients. This includes the sour cream, milk, and eggs. Room temp ingredients blend better and help the cupcakes bake evenly.

  • Sift the powdered sugar for the frosting. It only takes a minute, but it makes the frosting super smooth and lump-free.

  • Cool completely before frosting. I know it’s hard to wait, but if you frost too soon, that beautiful lemon buttercream will melt right off the top.

  • Decorate just before serving. If you’re adding lemon wedges on top, wait until close to serving so they stay fresh and vibrant.

  • Store leftovers in the fridge. These keep well in an airtight container in the fridge for up to 3 days. Just let them come to room temp before enjoying again!

Get Creative!

  • Try a glaze instead of frosting. If you want something lighter, skip the buttercream and drizzle the cooled cupcakes with a simple lemon glaze made from powdered sugar and lemon juice.

  • Add a berry twist. Fold a handful of fresh blueberries or raspberries into the batter for a sweet surprise in every bite. Lemon and berries are such a perfect pair.

  • Switch up the frosting. Not a fan of lemon-on-lemon? Try a vanilla bean buttercream or even a light cream cheese frosting for a different flavor combo.

  • Make them mini! Use a mini muffin tin to turn these into adorable bite-sized cupcakes. Just reduce the bake time to about 10-12 minutes and keep an eye on them.

  • Add a filling. Pipe a little lemon curd into the center of each cupcake for an extra burst of citrus. It’s such a fun surprise when you take a bite.

  • Play with toppings. Skip the lemon wedge and try candied lemon slices, edible flowers, or a dusting of powdered sugar for a fancier finish.

  • Go gluten-free. Swap the flour with your favorite gluten-free blend to make these more allergy-friendly. Just check that the texture stays nice and fluffy.

  • Dress them up for spring. Use pastel cupcake liners or top them with tiny sugar flowers for a cute touch at baby showers, brunches, or Easter gatherings.

Serving & Storing

  • Let them come to room temp before serving. If you’ve stored the cupcakes in the fridge, I like to take them out about 30 minutes before serving so the frosting softens up and the flavors really shine.

  • Perfect for parties and showers. These cupcakes look adorable on a dessert table. I love displaying them on a tiered stand with lemon slices tucked around for a little extra flair.

  • Great make-ahead option. You can bake the cupcakes a day in advance and frost them the next day. Just store the cupcakes in an airtight container at room temp overnight.

  • Store leftovers in the fridge. Because of the buttercream, I keep any extras in the fridge in a sealed container. They stay fresh for up to 3 days.

  • Freeze the cupcakes (unfrosted). If you want to bake ahead, you can freeze the unfrosted cupcakes for up to 2 months. Just let them cool completely, then wrap tightly and freeze. Thaw overnight and frost fresh.

  • Frosting can be made ahead too. You can make the lemon buttercream a day or two in advance and store it in the fridge. Just let it come back to room temp and give it a quick whip before using.

  • Serve chilled for a refreshing twist. On hot days, these cupcakes taste amazing straight from the fridge – super refreshing and cool.
