Easter Whoopie Pies

Easter is one of my favorite times to bake, and these Easter Whoopie Pies are always a hit in my house. There’s just something about soft, pillowy cookies sandwiched with creamy frosting that makes everyone – kids and adults alike – light up with excitement. And the best part? They’re incredibly easy to make, thanks to a simple cake mix shortcut! With festive pastel sprinkles and a swirl of pink frosting, these little treats are as fun to make as they are to eat.

I love recipes that bring a little extra joy to the holiday, and these whoopie pies do just that. The cookies bake up soft and fluffy, with just the right amount of chewiness, while the smooth, sweet frosting ties everything together. Plus, decorating them with colorful sprinkles makes for a great hands-on activity with the kids. They love helping press the sprinkles into the dough and sandwiching the cookies together – though I have to keep an eye on them, or half the frosting disappears before it makes it onto the cookies!

Whether you’re making these for an Easter brunch, a school treat, or just because, they’re sure to bring a smile to everyone’s face. I like to store them in an airtight container so they stay soft and fresh, though they never seem to last long in my house! If you’re looking for a simple, festive dessert that feels extra special, these Easter Whoopie Pies are the perfect pick.

Tips for Perfect Easter Whoopie Pies

  • Use Parchment Paper for Easy Cleanup – Lining your baking sheet with parchment paper prevents sticking and makes cleanup a breeze.

  • Don’t Overmix the Dough – Mix until just combined to keep the cookies soft and fluffy rather than dense.

  • Scoop Evenly for Uniform Cookies – A cookie scoop helps ensure all your cookies are the same size, making them easier to sandwich together.

  • Press the Sprinkles in Gently – Lightly pressing the sprinkles into the dough before baking helps them stick and prevents them from falling off.

  • Let the Cookies Cool Completely – Frosting warm cookies will cause it to melt and slide off, so be patient and let them cool on a wire rack.

  • Adjust the Frosting Color to Your Liking – Add more or fewer drops of food coloring to get the perfect shade of pink.

  • Use a Piping Bag for a Neat Finish – Piping the frosting onto the cookies instead of spreading it with a knife gives a clean, bakery-style look.

  • Store in an Airtight Container – Keep your whoopie pies fresh by storing them in an airtight container at room temperature for up to 3 days.

  • Chill for a Firmer Texture – If you prefer a firmer filling, pop the assembled whoopie pies in the fridge for about 30 minutes before serving.

  • Get Creative with Flavors – Swap out the vanilla frosting for cream cheese frosting or even a flavored filling like lemon or strawberry for a fun twist!

Get Creative!

  • Swap the Cake Mix Flavor – Try using a strawberry, lemon, or funfetti cake mix for a different flavor twist.
  • Mix Up the Frosting – Instead of vanilla, fill your whoopie pies with cream cheese frosting, marshmallow fluff, or even chocolate frosting for a richer treat.
  • Add a Flavor Boost – Stir in a splash of almond or lemon extract to the batter or frosting for an extra layer of flavor.
  • Play with Colors – Use different pastel food colorings for the frosting, like light blue, lavender, or yellow, to create a colorful assortment.
  • Make Mini Whoopie Pies – Use a smaller cookie scoop to create bite-sized treats that are perfect for little hands.
  • Add a Surprise Center – Try piping a bit of jam, Nutella, or peanut butter in the center of the frosting for a fun surprise when you bite in!
  • Roll the Edges in Sprinkles – After assembling, roll the edges of the frosting in extra sprinkles, mini chocolate chips, or crushed freeze-dried fruit for an extra festive touch.
  • Turn Them Into Ice Cream Sandwiches – Freeze the cookies and use a scoop of ice cream instead of frosting for a cool and creamy treat.

Serving & Storing

  • Best Served Fresh – These whoopie pies taste best the day they’re made, but they’ll stay soft and delicious for a few days.
  • Room Temperature Storage – Keep them in an airtight container at room temperature for up to 3 days to maintain their soft texture.
  • Refrigerate for Longer Freshness – If you need to store them longer, place them in the fridge for up to a week, but allow them to come to room temperature before serving for the best flavor.
  • Freeze for Later – Wrap each whoopie pie individually in plastic wrap, then store in a freezer-safe bag or container for up to 2 months. Thaw at room temperature before enjoying.
  • Serve with a Fun Presentation – Arrange them on a pastel-colored platter or cake stand for an extra festive touch at Easter gatherings.
  • Pair with a Drink – These go great with a glass of milk, a cup of coffee, or even a festive Easter punch for a complete treat.
