Easter is one of my favorite times to get creative in the kitchen, and these Peeps Bunny Cheesecake Pudding Cups are always a hit in my house. There’s just something about the fun layers of creamy cheesecake pudding, crushed cookies, and colorful Peeps that makes them irresistible. My kids love helping me put them together – especially when it comes to sprinkling on the coconut “grass” and picking out their favorite Mini Eggs to decorate. It’s such a simple treat, but it brings so much joy to our Easter celebrations.

  • 4 oz whipped topping – Folding in whipped topping adds a light and airy texture to the pudding layers.
  • 1 ½ cups crushed Oreo cookies – A crunchy layer of crushed Oreos mimics “dirt” for a fun and delicious contrast.
  • 6 Peeps bunnies – These colorful Peeps bunnies add a playful and festive touch on top.
  • ¼ cup shredded coconut – Shredded coconut creates a grassy nest effect, perfect for an Easter theme.
  • Red, green, and blue food coloring – A few drops of food coloring bring the coconut grass to life with vibrant spring hues.
  • 18 Cadbury Mini Eggs – These candy-coated chocolate eggs add the perfect pop of color and a sweet crunch.

Step-by-Step Instructions

1. In a large bowl, whisk together the pudding mix and milk for 2 minutes. Add 2 drops of red food coloring and 1 drop of blue food coloring. Mix until the color is solid.

2. Fold in the whipped topping.

3. In 9 oz cups (link above), layer 2-3 to tablespoons of cookie crumbs.  

Then 3-4 tablespoons of pudding mixture.

Repeat these layers. Top with a sprinkle of cooking crumbs.

4. Insert a Peep bunny into the center of the cup.

5. Add coconut and one drop of green food coloring to a ziplock bag, seal closed, and shake until the coconut has turned green. Sprinkle a little of the green “grass” on top of the “dirt” cookie crumbs.

6. Add 3 Cadbury Mini Eggs in front of the bunnies in each cup.

7. Chill for 30 minutes, or until ready to serve.
