15 Cookout-Worthy Main Dish Potluck Recipes for the 4th of July
When it comes to 4th of July parties, there’s usually a big table full of food and everyone bringing something different to share. Main dishes are often the first things to disappear, especially when there are sliders, tacos, BBQ sandwiches, and easy crockpot meals involved.
I’ve put together some of my favorite, simple main dish recipes that I think work really well for cookouts, backyard parties and summer potlucks. There’s a real mix here from easy party sliders to sheet pan dinners so there’s something to suit everyone.
A lot of these recipes can be prepped ahead of time and are easy to transport too, which makes them ideal for taking along to family gatherings, neighborhood parties, and casual summer get-togethers.
1. BBQ Pulled Pork Sandwiches

Pulled pork sandwiches are always a good idea for summer parties because they’re easy to make ahead and can feed a lot of people without too much effort. Add a big bowl of coleslaw, some chips, and a few sides and you’ve got a really easy 4th of July meal that everyone will happily pile onto their plates.
Servings: 8-10
Ingredients:
- 1.5 lb pork shoulder (bone-in or boneless, trimmed)
- 1 tsp kosher salt
- ½ tsp black pepper
- 1 tbsp paprika
- ½ tsp garlic powder
- 1 tsp onion powder
- 1 tbsp brown sugar (optional)
- 1/2 cup apple cider vinegar (for moisture)
- ½ cup BBQ sauce (plus extra for serving)
- 4–6 sandwich buns or crusty rolls
- Coleslaw (optional, for topping)
Dry rub (do this first)
- Mix salt, pepper, paprika, garlic powder, onion powder, and brown sugar (if using).
- Rub all over the pork. Refrigerate 4–24 hours if possible.
Instructions:
Method A: Slow Cooker (Easiest)
- Place the pork in the slow cooker and pour in ½ cup apple cider vinegar and ½ cup BBQ sauce.
- Cover and cook on low for 8–10 hours or on high for 4–6 hours, until the pork is very tender and easy to shred.
- Remove the pork from the slow cooker and skim any excess fat from the cooking juices.
- Shred the pork using two forks.
- Return the shredded pork to the slow cooker and toss with additional BBQ sauce. Keep warm until ready to serve.
- Toast or warm the buns, then fill with the shredded pork. Add coleslaw and extra BBQ sauce if desired.
Method B: Oven Braise (Classic Method)
- Preheat the oven to 300°F (150°C).
- If desired, heat a heavy pot or Dutch oven and sear the pork on all sides for added flavor.
- Add ½ cup apple cider vinegar and 1 cup BBQ sauce to the pot.
- Cover tightly and place in the oven. Braise for 3–4 hours, or until the pork is tender and pulls apart easily.
- Remove the pork and shred it using two forks.
- Return the shredded pork to the pot and mix with the remaining sauce. If the sauce is too thin, simmer uncovered for 10–15 minutes to thicken.
- Toast or warm the buns, then fill with the shredded pork. Top with coleslaw and extra BBQ sauce if desired.
2. Bacon Ranch BBQ Chicken Sliders

These sliders are the kind of party food that people tend to grab straight from the tray before they’ve even sat down. The BBQ chicken, crispy bacon, and ranch combination works so well together and they’re perfect for feeding a large group at a 4th of July cookout or backyard potluck.
Servings: 6
Ingredients:
- 1.5 lb of boneless skinless chicken breasts
- 2 cups of barbecue sauce (divided)
- 1 12 pack of Hawaiian rolls
- 1/4 cup of mayonnaise
- 6 slices of Colby jack cheese
- 8 slices of cooked bacon
- Half a red onion (sliced)
- 2 cups of shredded lettuce
- 1/4 cup of ranch dressing
Instructions:
- Cut the chicken breasts in half so you have 4 inch pieces. Place them in a gallon zip lock bag and add 1 1/2 cups of barbecue sauce, shake the bag until the chicken is coated.
- Add the chicken to a large skillet over medium heat with 1 tbsp of your choice of oil, to prevent sticking. Cook for 5-7 minutes on each side until it gets a bit of charred parts to it. Once cooked, chop/shred all the chicken up and set aside.
- Slice the Hawaiian rolls horizontally, place the top buns to the side and place the bottom buns on a tray. Spread mayonnaise on the bottom buns. Spread the shredded chicken on the buns.
- Add the leftover 1/2 cup of barbecue sauce all over the shredded chicken. Add the cheese slices, bacon, onions and lettuce all over top, drizzle the ranch all over the lettuce. Place the top buns on top of the lettuce and cut out each slider. Serve and enjoy!
3. Maple Butter Chicken Bacon Sliders

There’s something about sliders that just makes them perfect for summer parties and casual cookouts. These have that sweet and savory combination from the maple butter, chicken, and bacon that always goes down well at potlucks, and they’re easy to make for a large group at a party too.

Ingredients:
- 12 slider buns (like Hawaiian rolls)
- ½ lb thinly sliced cooked ham
- 12 slices Swiss cheese
- ¼ cup mayonnaise
- 1 tbsp Dijon mustard
- 4 tbsp butter, melted
- 1 tbsp minced onion
- 1 tbsp poppy seeds
Instructions:

Preheat your oven to 350°F (175°C).

Cut the slider buns in half and place the bottom halves in a baking dish.

Spread mayonnaise on the buns, then layer Swiss cheese, ham, and another layer of Swiss cheese on top.

Place the top halves of the buns over the fillings to close the sliders.

In a bowl, mix together melted butter, Dijon mustard, minced onion, and poppy seeds to make the glaze.

Brush the glaze generously over the tops of the sliders, ensuring even coverage.

Cover the baking dish with aluminum foil and bake for 15 minutes.

Remove the foil and bake for an additional 5–10 minutes, or until the tops are lightly browned and crispy.

5. Big Mac Salad

This is one of the easiest ways I’ve found to get salad into my kids! It has all the flavors of a classic burger in an easy salad version, which makes it perfect for summer cookouts and casual 4th of July gatherings.

If there’s one thing people tend to gather around at a party, it’s crispy pork straight from the serving tray. This is packed with flavor and works really well as a main dish for summer potlucks, especially served with salads, buns, or easy cookout sides.
Servings: 4
Ingredients:
- 800 g pork belly, skin scored
- ¾ tsp salt
- ¾ tsp black pepper
- ¾ tsp ground coriander
- ¾ tsp white sugar
Instructions:
- Pat the pork belly dry with kitchen paper. Using a sharp knife, score the skin in parallel lines, then cut diagonally across to create a crosshatch pattern.
- In a small bowl, mix together the salt, black pepper, ground coriander, and white sugar. Rub this mixture all over the pork belly, making sure to work it into the scored skin.
- Wrap the pork tightly in cling film and refrigerate for at least 4 hours, or overnight, to help draw out moisture and improve the crackling.
- Remove the pork from the fridge 30 minutes before cooking. Unwrap and place it skin-side up in a cast iron pot or deep roasting tin. Preheat the oven to 180°C (160°C fan / Gas 4).
- Roast uncovered for 1 hour 20 minutes, until the meat is tender and cooked through. Increase the oven temperature to 220°C (200°C fan / Gas 7) and continue roasting for another 25–30 minutes, until the skin is golden, blistered, and crisp.
